No-Bake Matcha cake

As the winter solstice is closing by, I got inspired to make this delicious No-Bake Matcha cake. I was reading a book by Glennie Kindred, which was called Sacred Earth Celebrations and there she talks about old Celtic festivals. It is time of christmas, so called the time of winter solstice, when the sun king rises again.

This time of the year is special for the celebration of darkness how it morphs into light. Important part of the winter are the evergreens, who stay green regardless the season. So I was drawn to make-bake something delightfully green. It is a time for celebration so this is my take on a celebratory setting.

For bottom layer:

  • Overnight soaked cashews
  • Coconut oil
  • Date paste
  • Maca powder
  • A little bit of lemon juice
  • Pinch of salt

For the topping:

  • Avocado
  • Buckwheat flour
  • Date paste
  • Coconut oil
  • Cinnamon
  • Matcha green tea
  • Apples for decoration

  1. Process in a blender (processor) cashews, dates, Maca, lemon juice and pinch of salt into a quite thick paste.
  2. Spread it to a bottom of your prefered tray (you may use baking sheets, and other equipment instead of my recommendations).
  3. In a bowl mix together Matcha powder, avocado, buckwheat flour, date paste and cinnamon. Add water when necessary or your favourite milk (I use oat milk).
  4. Spread the paste over the bottom layer.
  5. Decorate your cake with apple slices and refrigerate it overnight.
  6. Enjoy after that.
